Riverside Hotel Announces Paul Muldoon as New Executive Chef

FORT LAUDERDALE, Fla. January 15, 2007 The Riverside Hotel today announced the addition of Paul Muldoon as executive chef. With nearly 25 years of restaurant experience at four and five-star hotels and private golf resorts, Muldoon brings a wealth of culinary expertise to the Riverside Hotel team. Previously, Muldoon served as executive chef for the Key Largo Grande in Key Largo, Fla.

As executive chef, Muldoon will oversee and supervise the Riverside Hotels extensive kitchen operations in support of the hotels three restaurants Grill Room on Las Olas, Indigo and Brio Mediterranean Bistro. He will also coordinate the work of the kitchen staff and direct the preparation of meals for the hotels substantial banquet and catering division. In addition, he will determine portions, plan menus, handle inventory and mange revenue in order to ensure quality, superior cuisine.

The Riverside Hotel is poised for remarkable growth and success in the food and beverage sector, said Peter Schmidt, VP of food & beverage for the Riverside Hotel. Chef Muldoons passion, captivating energy and guiding vision will lead our hotel, its three restaurants, and our banquet and catering facility to the five-star level.

Originally from Manchester, England, Muldoon received formal training at Accrington and Rossdale Catering College. His first professional position was catering chef at the historic Grosvenor House, a five-star hotel set in Mayfair at Park Lane near museums and landmarks, grand department stores, West End theaters and businesses. Frequented by royalty, celebrities and business leaders since 1928, the Grosvenor House offers a quintessential British experience, including all aspects of food and beverage.

From 1988 to 1994, Muldoon served as the restaurant chef at the Coral Beach & Tennis Club in Bermuda, a private club on 26 acres of sub-tropical grounds overlooking the South Shore in Paget Parish. From Bermuda, Muldoon relocated to Australia to open his own catering company. Rovers Catering Service specialized in catering high-end private cocktail parties and civic functions for Australias dignitaries, such as Lord Mayor Brisbane.

During his years in Australia, Muldoon refined his signature Asian fusion style by combining exotic spices and herbs from Thailand, Malaysia, China and New Zealand. He was inspired by Australias large Asian population and began assimilating their techniques within classical and contemporary dishes.

In 2000, Muldoon held the title of executive sous chef at Bistro Double U in Fort Lauderdale, a continental restaurant opened by Chef Udo Mueller and Co-owner Uli Duppon. He also participated as a guest chef at James Beard House in New York City, a not-for-profit organization dedicated to preserving and nurturing Americas culinary heritage. More than 20 dinners, lunches, and workshops are held there each month to showcase culinary artists from around the world.
Muldoon acquired additional fine dining experience by preparing large banquets and catering to high volume restaurants as sous chef at the Boca Raton Resort and Club and as resort chef at the Bahia Mar Hotel and Beach Resort in Fort Lauderdale.

About the Riverside Hotel

The history of the Riverside Hotel dates back to the 1930s, when brothers Preston, John and Thomas Wells established their family-owned and operated business, The Las Olas Company, Inc. In 1936, The Las Olas Company built an 80-room hotel with baths and named it the Hotel Champ Carr in honor of its general manager. In 1947, Champ Carr stepped down and the Wells brothers renamed it the Riverside Hotel.

For more than 70 years, no other venue in Fort Lauderdale has been able to surpass the ambience, cuisine and superior service of the Riverside Hotel.
